Ingredients

2 tablespoons oil ( for frying , I use olive oil )
1/2 cup chopped sweet red pepper
1/2 cup chopped green pepper
2 carrots , peeled or scrubbed , sliced thin
2 stalks celery , sliced thin
1 onion , chopped
2 cloves garlic , minced
1 lb lean ground turkey , ground chicken or 1 lb ground beef
1 can diced tomatoes
3/4 cup frozen corn or 3/4 cup canned corn
4 teaspoons chili powder
1 teaspoon salt
1/2 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon pepper
1 can white kidney beans or ( 19 ounce ) can red kidney beans ( drained and rinsed )
4 large crusty rolls
1/2 cup shredded cheddar cheese or 1/2 cup monterey jack cheese

Instructions

1.Heat the two tablespoons of oil in a large pot over medium-high heat.
2.Add and sauté the chopped sweet red pepper, green pepper, sliced carrots and celery until tender.
3.Add the chopped onion and garlic and cook until the onion is soft.
4.Add the ground turkey or chicken or beef, with chili powder, salt, ground cumin, dried oregano and pepper. Cook until meat is browned.
5.Add the canned diced tomatoes and frozen or canned corn and cook until heated through.
6.Add the white or red kidney beans (drained and rinsed) and cook for an additional 5 minutes to incorporate flavors.
7.For the bread bowl, heat the crusty rolls in the oven for 5 minutes or until crisp.
8.Cut and scoop out the center of each roll to make a bowl and sprinkle the shredded cheddar or monterey jack cheese. Broil for 1-2 minutes until the cheese is melted.
