Ingredients

3 chicken breast fillets
4 garlic cloves
1 red onion
2 tomatoes
1 green capsicum
2 tablespoons olive oil
1/4 teaspoon chili powder
8 ready-made flour tortillas
50 g cheddar cheese or 50 g monterey jack cheese
1 sprig flat leaf parsley , to garnish
lemon wedge , to garnish
The Taco Pollo is a delicious and easy-to-make Mexican dish that is perfect for a quick lunch or dinner. It consists of tender chicken breast fillets cooked with garlic, onion, tomatoes and green capsicum, all wrapped up in warm flour tortillas. Instructions

1.Preheat oven to 375°F (190°C).
2.Place chicken fillets in an ovenproof dish.
3.Finely chop garlic and onion and sprinkle over chicken.
4.Dice tomatoes and green capsicum and place over chicken.
5.Drizzle olive oil over chicken and vegetables.
6.Sprinkle chili powder over the top of the dish.
7.Cook in the oven for 45 minutes until chicken is cooked and vegetables are soft.
8.Using a fork, shred the chicken and mix in with the vegetables.
9.Warm tortillas in the microwave or a dry frying pan for 30 seconds on each side.
10.Divide the chicken mixture between tortillas and top with grated cheese, parsley and a squeeze of lemon juice.
11.Serve immediately.
