Ingredients

4 large baking potatoes
2 tablespoons sunflower oil
paprika ( optional )
1 -2 teaspoon sunflower oil
1 garlic clove , peeled and crushed
1 -2 red chile , deseeded and chopped
6 spring onions , trimmed and finely chopped
2 tablespoons sugar
225 g ripe tomatoes , deseeded and chopped
1 small ripe avocado
zested rind and juice 1 lime
2 tablespoons freshly chopped coriander
extra lime zest ( to garnish )

Instructions

1.Preheat the oven to 375°F (190°C).
2.Cut the potatoes lengthwise into wedges. Place the potatoes on a baking sheet and drizzle with 2 tablespoons of sunflower oil. Season with paprika if desired. Toss to coat evenly.
3.Bake the potatoes in the oven for 25-30 minutes, or until crispy and golden brown.
4.While the potatoes are cooking, heat 1-2 teaspoons of sunflower oil in a frying pan over medium heat. Add garlic, chile, and spring onions. Cook for 1-2 minutes, or until the vegetables are soft.
5.Add sugar and tomatoes to the pan. Stir to combine.
6.Mash the avocado in a bowl with a fork. Add the lime zest and juice, coriander, and tomato mixture. Stir well.
7.Serve the hot, crispy potatoes with the spicy avocado sauce on top. Garnish with extra lime zest.
