Ingredients

1 lb minced beef
1 can plum tomatoes
1 can red kidney beans
1 can haricot beans
2 tablespoons tomato puree
1 large onion , chopped
3 -4 teaspoons smoked paprika
1 taco seasoning mix , mild ( I use Old El Passo )
2 garlic cloves , crushed
1 red pepper , diced
2 tablespoons vegetable oil

Instructions

1.Heat the vegetable oil in a large pot over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.

3.Add the red pepper and cook for another 5 minutes.
4.Add the smoked paprika and taco seasoning mix and stir to combine.
5.Add the tomato puree and stir to combine.
6.Add the canned tomatoes, kidney beans, and haricot beans (do not drain, use the liquid as well). Stir everything together and bring to a boil.
7.Reduce the heat to low and simmer for at least 30 minutes, stirring occasionally.
8.Serve hot with rice or tortilla chips and toppings of your choice.
