3 tablespoons butter , divided
1 cup onion , finely chopped
1 medium green bell pepper , seeded and cut into strips
8 large eggs , beaten
1 teaspoon salt
8 large flour tortillas
1 cup shredded monterey jack cheese or 1 cup cheddar cheese

Chorizo Breakfast Wraps is a tasty breakfast meal that originated from Latin America. Instructions

1.In a large skillet over medium-high heat, cook chorizo sausage until it is browned and cooked through, breaking it up into small pieces as it cooks.
2.Remove the chorizo from the skillet and set aside. Wipe out the skillet with a paper towel.
3.Melt 2 tablespoons of butter in the skillet over medium heat. Add onion and bell pepper and sauté until the vegetables are tender.
4.Add the reserved chorizo to the pan with the beaten eggs. Season with salt and scramble the eggs until cooked through.
5.Warm the flour tortillas in the microwave or on the stove top.
6.Divide the cheese evenly among the 8 tortillas. Add a scoop of the chorizo-egg mixture to each tortilla and roll it up into a wrap.
7.Melt remaining 1 tablespoon of butter in the skillet over medium heat. Add the wraps, seam side down, and cook until golden brown on all sides.
8.Serve with guacamole and salsa as a topping.
