Ingredients

1 crusty cobb loaf , any variety
1 kg beef mince ( depends on how big your cob loaf is )
1 tablespoon oil
1 large onion , chopped
1 capsicum , chopped
2 fresh white garlic cloves , minced
1 teaspoon chile , fresh chopped ( can be omitted )
3 teaspoons chili powder
1 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon ground black pepper
1 teaspoon sweet paprika
1 teaspoon oregano ( ground or dried )
2 tablespoons Worcestershire sauce
1 1 cup taco sauce or 1 cup crushed tomatoes
1 can canned red kidney beans , drained ( optional )
1 cup tasty cheese
200 ml light sour cream
100 ml chili sauce

Instructions

1.Preheat the oven to 180°C.
2.Cut the top off the cobb loaf and set it aside. Scoop out the bread inside, creating a cavity in the loaf. Dice the bread you just scooped out and reserve for later.
3.In a large skillet, heat the oil over medium-high heat. Add the onion, capsicum, garlic, and fresh chile (if using) and cook for 2-3 minutes until slightly softened.
4.Add the beef mince to the skillet and cook until browned and crumbled, about 10 minutes. Drain any excess fat.
5.Reduce the heat to medium-low. Add the chili powder, coriander, cumin, black pepper, sweet paprika, and oregano to the skillet. Mix well and cook for 5 minutes.
6.Stir in the Worcestershire sauce, taco sauce or crushed tomatoes, and kidney beans (if using) and cook until heated through.
7.Spoon the beef mixture into the hollowed-out cobb loaf. Sprinkle the reserved diced bread on top of the beef mixture.
8.Top with tasty cheese and bake for 15 minutes until the cheese is melted and bubbly.
