8 chipotle chiles in adobo , finely chopped , plus 3 tbsp . sauce from the can

Instructions

1.Preheat the oven to 375°F.
2.Place the flour, beaten eggs, and breadcrumbs in separate shallow dishes.
3.Season veal cutlets with salt and black pepper, then coat them in flour, shaking off any excess. Dip the cutlets in beaten eggs, then coat them in breadcrumbs.

7.Place the sliced avocados on the bottom half of the toasted rolls. Place the baked cutlet on top of the avocado. Top with the remaining half of the roll. Serve immediately.
