Instructions

1.Preheat oven to 350°F (175°C).

3.Quickly pour into an 8-in. flan dish, swirling until bottom and sides are coated. Let cool.
4.In another saucepan, heat half-and-half, pumpkin, cinnamon, mixed spice, and salt until mixture just comes to a boil. Remove from heat; let stand for 10 minutes.
5.In a large bowl, whisk eggs, egg yolks, and vanilla. Gradually whisk in pumpkin mixture. Strain and pour over caramelized sugar.
6.Place flan dish in a large baking pan; add 1 in. of hot water to larger pan. Bake until center is just set (mixture will jiggle), 35-40 minutes. Remove flan dish from water bath and let cool completely. Refrigerate, covered, overnight.
7.Invert flan onto a rimmed platter. Discard caramel. Combine rum extract and ginger. Serve with cool flan.
