6 ounces fresh raspberries , picked over and rinsed
1 1/2 tablespoons agave nectar ( or more )
4 -5 medium peaches , halved and pitted ( peaches must be very ripe , even overly ripe )
1/2 lime , juice of
1/4 teaspoon vanilla extract

This Raspberry Peach Agua Fresca is a delicious twist on the classic recipe, incorporating two of summer's most beloved fruits. Instructions

1.In a blender, add the raspberries, agave nectar, and 1/4 cup of water. Blend until smooth.
2.Pour the raspberry mixture through a fine mesh strainer, pressing on the solids to extract all of the juice. Discard the solids.
3.Rinse the blender and add the peeled and pitted peaches to it. Add in the lime juice, vanilla extract, and another 1/4 cup of water. Blend until smooth.
4.In a pitcher, mix together the raspberry and peach mixtures. Add in 1/2 cup of water, or more if desired, to adjust the sweetness and consistency.
5.Chill the agua fresca for at least 30 minutes before serving over ice, with additional raspberries and peach slices as desired.
