8 ounces cheddar cheese ( shredded , I used low-fat , separated )
1 teaspoon chili powder
1/2 teaspoon smokey paprika
3/4 teaspoon salt
3 green onions , chopped
1 tomatoes , chopped
1/3 cup salsa ( I used hot )
2 eggs
1 teaspoon olive oil
12 ounces veggie crumbles ( or ground beef )
1 shallot , chopped

Instructions

1.Preheat oven to 350°F.
2.Line the pie crust with parchment paper and fill with dried beans.
3.Bake the pie shell for 10 minutes and then remove parchment paper and beans. Set aside.
4.In a skillet, heat oil, add shallot and sauté until translucent.
5.Add veggie crumbles and cook for about 3-4 minutes while stirring occasionally.
6.Stir in chili powder, smokey paprika and salt.
7.Layer pinto beans, cheese, tomato, and the veggie crumbles mixture in the pie shell, in that order.
8.Whisk the eggs and salsa together and pour over the filling.
9.Sprinkle the remaining cheese on top.
10.Bake for 30-35 minutes or until the edges of the pie crust are golden brown.
