Ingredients

8 ancho chilies , wiped clean
1/2 cup cider vinegar
2 cups water
2 small onions , chopped
5 garlic cloves , chopped
1 tablespoon cumin
1 cup chicken stock
1/2 cup orange juice
2 tablespoons brown sugar
2 tablespoons tomato paste
1 tablespoon flour
3 lbs lean pork , cut into bite sized pieces
salt and pepper

Instructions

1.In a large bowl, soak the ancho chilies in cider vinegar and 1 cup of water for 30 minutes, or until chilies are soft.
2.Drain the chilies and discard the liquid. In a blender, puree the chilies along with chopped onions, garlic, cumin, remaining cup of water, chicken stock, orange juice, brown sugar, tomato paste, and flour until smooth.
3.In a large pot, heat oil over high heat. Season pork with salt and pepper and add to the pot. Cook until browned, stirring occasionally for around 5 minutes.
4.Add puree into the pot and bring it to boil over high heat. Reduce heat and let it simmer for a minimum of 60 minutes.
5.Serve hot with your favorite side dish or tortilla.
