Ingredients

30 corn tortillas
16 ounces enchilada sauce ( use 2 cans , I use El Paso red sauce and it 's great ! )
2 bunches green onions ( scallions )
2 cans of sliced black olives
24 ounces Mexican blend cheese , I buy mine at Costco ( shredded )
3 cups shredded chicken , I use white meat , this is option if you want to make just cheese enchiladas
Helen's Fabulous Enchiladas are a delicious and flavorful Mexican dish that is perfect for sharing with friends and family. Instructions

1.Preheat oven to 375 degrees Fahrenheit.
2.Heat enchilada sauce in a small saucepan over medium heat.
3.Pour a small amount of the enchilada sauce into the bottom of a lightly greased 9x13 inch baking dish.
4.Dip each tortilla into the heated enchilada sauce and cover both sides.
5.Fill each tortilla with shredded chicken (if using), cheese, green onions, and black olives. Roll up the tortilla and place seam-side down in the baking dish. Repeat for each tortilla until the dish is full.
6.Pour remaining enchilada sauce over the enchiladas, then sprinkle with the remaining cheese.
7.Bake in preheated oven for 20 to 25 minutes, or until cheese is melted and bubbly.
