Caribbean Zucchini Bread is a unique twist on a classic banana bread recipe, and it works just as well as a sweet and delicious breakfast option for kids and adults alike. The shredded zucchini adds moisture and nutrition, while the hint of cinnamon, nutmeg, and vanilla gives it a tropical feel. The recipe is versatile and adapts well to various dietary needs. For example, it can be made gluten-free by substituting the all-purpose flour with gluten-free flour, and it can be made vegan by using a flax egg instead of regular eggs. Serve it toasted with a dollop of butter or cream cheese on top, or enjoy it just as is!

Instructions

1.Preheat oven to 350°F (175°C) and grease two 9x5-inch loaf pans or three 8x4-inch loaf pans.
2.In a large bowl, whisk together the all-purpose flour, whole wheat flour, salt, baking soda, baking powder, cinnamon, and nutmeg.
3.In another bowl, beat together the mashed bananas, eggs, vegetable oil, unsweetened applesauce, brown sugar, white sugar, and vanilla extract.
4.Gently mix the dry ingredients into the wet ingredients until just combined, then fold in the grated zucchini, chopped walnuts, and shredded coconut.
5.Pour the batter evenly into the prepared pans and bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
6.Let the bread cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
