Ingredients

1 teaspoon lemon pepper
1/4 teaspoon ground cumin
1/4 teaspoon salt
6 tablespoons lime juice , divided
1 1/2 lbs perch fillets , skinned and cut into 1/2-inch strips ( you may sub tilapia , or for a vegetarian version , use Worthington Scallops )
1 cup chopped fresh pineapple ( may sub canned )
1/4 cup diced red onion
1/4 cup diced red bell pepper
1/4 cup diced green bell pepper
2 tablespoons jalapenos , seeded and chopped
2 tablespoons fresh cilantro , chopped
4 tortillas , warmed

Instructions

1.In a small bowl, mix together the lemon pepper, cumin, salt, and 4 tablespoons of lime juice. Set aside.
2.Place the perch fillets into a large plastic zipper bag. Pour the marinade into the bag and seal, then turn the bag to coat the fish evenly. Refrigerate for at least 30 minutes.
3.In a separate bowl, combine the chopped pineapple, red onion, red and green bell peppers, jalapenos, cilantro, and the remaining 2 tablespoons of lime juice. Mix together.
4.Heat a large skillet over high heat, and add the fish strips. Cook for 4-5 minutes until the fish is opaque and slightly browned.
5.Serve the fish strips on a warm tortilla with the pineapple salsa on top.
