Ingredients

4 -6 pieces chicken
1 yellow onion
2 cups red chili peppers
1 teaspoon oregano
1 teaspoon cumin
1 tablespoon garlic
1/4 cup cornstarch
1 -2 cup sharp cheddar cheese
9 -12 corn tortillas
1 roma tomato
1 cup lettuce
1/2 cup onion
1/2 cup sour cream
4 flour tortillas
New Mexico Red Chile Chicken Enchilada Casserole is a popular Southwest dish that is perfect for a night in with family or friends. Instructions

1.Preheat the oven to 375°F.
2.Boil chicken until no longer pink. Shred chicken into small pieces and set aside.
3.Sauté diced onion until translucent. Add in red chili peppers, oregano, cumin, and garlic and let cook for about 5 minutes.
4.In a small bowl, whisk together cornstarch and 1/2 cup of water.
5.Add cornstarch mixture to chili mixture and let simmer for about 5 minutes.
6.Take a 9x13 inch pan and add a layer of tortillas to the bottom of the pan. Top with chicken, chili mixture, and shredded cheese.
7.Continue layering until all ingredients are used up.
8.Place 4 flour tortillas on top of everything (these will be on the top layer) and sprinkle with remaining cheese.
9.Bake for 20-25 minutes.
