Ingredients

3 lbs ripe peeled , cored , seeded tomatoes ( reserve juice from the seeding )
1 lb onion , roughly cut into large pieces ( makes processing easier )
1/2 lb jalapeno ( stems removed , cut lengthwise , leave seeds and membrane )
1/4 cup white vinegar
2 teaspoons salt
1 1/2 teaspoons garlic powder
1 tablespoon dried cilantro
6 ounces tomato paste ( regular can , thickens the tomato juice and adds some extra flavor )
Judi's Texas Picante Sauce is inspired by the flavors of Texas cuisine, where spicy and bold flavors reign supreme. This recipe takes ripe tomatoes, onions, and jalapenos, and cooks them down into a flavorful sauce that can be used in a variety of dishes. The addition of white vinegar and dried cilantro adds a complexity of flavor to the sauce. Canned and stored, this sauce can be enjoyed all year round, adding a bit of Texas heat to any meal.

Instructions

1.In a large cooking pot, combine the peeled, cored, seeded tomatoes (with reserved juice from the seeding), roughly cut onions, and jalapenos.
2.Add in the white vinegar, salt, garlic powder, and dried cilantro.
3.Bring the mixture to a boil and then reduce heat to low.
4.Simmer until the vegetables are tender and the liquid has reduced by a third, stirring occasionally.
5.Remove from heat.
6.Stir in the tomato paste.
7.Allow the mixture to cool slightly.
8.Process the mixture in a food processor or blender until smooth.
9.Ladle the mixture into glass jars, leaving 1/2 inch of headspace.
10.If you plan to can the sauce, follow the canning instructions. If you plan to refrigerate the sauce, cover and store in the refrigerator.
