Ingredients

1/2 cup creole blackening seasoning
4 boneless skinless chicken breasts
2 tablespoons peanut oil
1 large onion , thinly sliced
3 tablespoons vegetable oil

8 flour tortillas

Instructions

1.With sliced onions on the side, season the chicken breasts with creole blackening seasoning to your taste
2.Cook chicken breasts on pan with peanut oil
3.In a pan over medium heat, saute the sliced onions in vegetable oil until caramelized.
4.Add in fresh basil, honey, and chicken broth and cook until broth reduces
5.Shred the cooked chicken breasts and set aside
6.Preheat the oven to 375°F
7.Assemble the quesadillas in oven by placing a tortilla on a baking sheet, adding cheese and shredded chicken before topping with a second tortilla.
8.Bake in the oven until the cheese is melted and the tortilla is brown and crispy.
9.To make the salsa, mix cranberries, light brown sugar, granulated sugar, diced red onions, chopped cilantro, fresh lime juice, serrano pepper, and minced garlic in a bowl.
10.Fold in diced mango and kiwi fruits into the bowl of the mixture.
