Ingredients

1 capons or ( 8 lb ) roasting chickens
4 garlic cloves , coarsely chopped
2 teaspoons kosher salt
1/2 cup fresh cilantro , finely chopped
1 tablespoon chili powder , like ancho
2 teaspoons ground cumin
3 tablespoons butter , unsalted , softened
2 lbs medium carrots , halved lengthwise and cut into thirds crosswise
1/2 cup water
A capon is a delicious and less common alternative to traditional roasted chicken. In this recipe, the capon is seasoned with a delicious blend of chili powder, cumin, and fresh cilantro, which infuses the meat with delightful savory and spicy flavors. Instructions

1.Preheat the oven to 425°F.
2.In a small bowl, stir together the garlic, 1 1/2 teaspoons of kosher salt, cilantro, chili powder, and cumin.
3.Stir in butter until well mixed.
4.Rinse the capon and pat dry with paper towels.
5.Sprinkle the remaining 1/2 teaspoon of salt inside the cavity of the bird.
6.Gently loosen the skin over the breast and legs of the bird. Rub 2/3 of the spice mixture over the flesh underneath the skin, spreading it evenly over the meat.
7.Rub the remaining spice mixture over the skin of the bird, making sure to evenly coat all sides.
8.Toss the carrots with 1/4 teaspoon of salt and 1 tablespoon of the butter mixture in a large baking dish.
9.Nestle the capon in the center of the dish, on top of the carrots.
10.Pour the water around the bird.
11.Roast the capon for 20 minutes per pound or until the internal temperature reaches 165°F when measured in the thickest part of the thigh.
12.Let the bird rest for 10 minutes before carving and serving.
