Ingredients

4 cups cool water
3 tablespoons lime juice
2 pounds goat stew meat , cut into 1-inch cubes
2 tablespoons vegetable oil
1 onion , diced
1 red bell pepper , diced
1 tablespoon tomato paste
1 cup water
1 tablespoon distilled white vinegar
1 tablespoon sweet soy sauce
1 teaspoon nutmeg
1 teaspoon paprika
Salt and pepper to taste
Kabritu Stoba is a traditional food of Dutch Antilles which is located in the Caribbean. The dish has African and European influences which have been blended with local ingredients to form a unique and irresistible stew. The use of goat meat makes it stand out from other stews, while the use of tangy lime juice, sweet soy sauce and a blend of fragrant spices creates a harmonious and delectable taste. Although it is a time-consuming dish to prepare, the result is well worth the effort put in.

Instructions

1.In a pot, bring 4 cups of water and lime juice to a boil. Add goat meat and cook on high heat for 10 minutes.
2.In a separate pot, heat vegetable oil over medium heat. Add onion and red bell pepper and cook until tender.
3.Add tomato paste, water, vinegar, sweet soy sauce, nutmeg, paprika, salt, and pepper. Stir to combine.
4.Add the goat meat and its broth to the pot.
5.Reduce the heat to low and let the stew simmer for 1-2 hours until the meat is tender and the sauce is thickened. Serve hot.
