Instructions

1.Preheat the oven to 375°F.
2.In a large bowl, mix together the Simply Potatoes & reg ; Shredded Hash Browns, grated cheddar cheese, and a light coating of olive oil flavored cooking spray. Mix well.
3.Divide the mixture into four portions. Spread each portion of the potato mixture onto a baking sheet lined with parchment paper.
4.Make a little indentation in the center of each potato portion and crack an egg into it.
5.Sprinkle the cumin and salt on top of the eggs.
6.Bake in the oven for 10-12 minutes, or until the egg whites are cooked and the yolks are set to your liking.
7.Remove from the oven and top with cooked chopped bacon, diced red bell pepper, green onion, and cilantro leaves.
8.Serve hot and enjoy!
