Ingredients

1 package dry kidney beans
4 tablespoons olive oil
1 bulb shallot , minced
3 cloves garlic , minced
1 cup uncooked long grain white rice
2 bay leaves
1 teaspoon adobo seasoning ( optional )
1 tablespoon kosher salt
freshly ground black pepper to taste
1/4 teaspoon ground cloves
3 sprigs fresh parsley
3 sprigs fresh thyme
1 scotch bonnet chile pepper
Rice & Beans (Haitian Style) is a beloved Haitian dish that is also popular across the Caribbean and Latin America. It is a staple food that can be enjoyed as a main dish or as a side dish, and is often served with plantains, chicken, or pork. The combination of kidney beans, rice, and a blend of unique spices makes it a standout on any dinner table, and a perfect dish to share with family and friends.

Instructions

1.Rinse the kidney beans and soak it in water overnight.
2.The next day, drain and rinse beans and set it aside.
3.In a large pot, heat the olive oil on medium-high heat.
4.Add minced shallot and garlic, and sauté for about 2 minutes.
5.Add the drained beans to the pot and cook for about 5 minutes.
6.Add the uncooked rice, bay leaves, adobo seasoning, salt, black pepper, ground cloves, parsley, thyme, and whole chile pepper to the pot.
7.Add 2 1/2 cups of water, stir the mixture, and bring it to a boil.
8.Reduce the heat to low and cover the pot.
9.Cook undisturbed for about 18 to 20 minutes until the rice is cooked and the water is fully absorbed.
10.Turn off the heat and let it sit covered for another 5-10 minutes.
11.Remove the bay leaves, scotch bonnet pepper, parsley, and thyme sprigs before serving.
