1 cup coconut , toasted
1 cup sugar ( I use Splenda )
1/4 cup water
2 tablespoons lemon juice
6 eggs , whole
3 egg yolks

Instructions

1.Preheat oven to 325°F (165°C).
2.In a saucepan over medium heat, combine coconut milk, coconut cream, and toasted coconut. Bring to a boil then remove from heat and let it steep for 20 minutes.
3.In another saucepan, add sugar (or Splenda), water, and lemon juice. Cook until it caramelizes and turns amber.
4.Quickly pour the caramel into the bottom of a 9-inch round dish. Allow it to cool and harden.
5.In a large mixing bowl, whisk together the eggs and egg yolks. Slowly pour in the coconut mixture, whisking constantly until it's well combined.
6.Strain the mixture into the dish over the caramel.
7.Bake for 50-55 minutes, or until the flan is set.
8.Remove from the oven and let it cool to room temperature before chilling in the fridge for at least 3 hours or overnight.
