Instructions

.Preheat the broiler and place the poblano peppers on a baking sheet. Broil the peppers until the skins are charred and blistered, turning occasionally to get an even char.
.Remove the peppers from the oven and place them in a bowl. Cover the bowl with plastic wrap and let sit for 15 minutes.
.After 15 minutes, remove the peppers from the bowl and carefully peel off the skins. Cut a slit down the middle of each pepper, making sure not to puncture the other side.
.In a mixing bowl, combine the mashed potatoes, queso fresco, queso Cotija cheese, cream cheese, salt, and white pepper. Mix well.
.Beat the egg whites until stiff peaks form. In a separate bowl, beat the egg yolks. Fold the egg whites into the egg yolks.
.Stuff each pepper with a heaping spoonful of the potato mixture.
.Place the flour and a dash of white pepper in a shallow dish. Dip each stuffed pepper in the flour, coating both sides.
.Heat oil in a large skillet over medium-high heat.
.Dip each stuffed pepper in the egg mixture, coating both sides.
.Fry each stuffed pepper in the hot oil until golden brown, turning occasionally to cook evenly on all sides.
.Remove the peppers from the skillet using a slotted spoon and place on a plate lined with paper towels to remove any excess oil.
.Sprinkle red pepper flakes over the peppers and serve hot.
