Ingredients

6 boneless skinless chicken breasts
1 tablespoon fresh lime juice ( about 1/2 lime )
3 tablespoons low-sodium taco seasoning
12 canned whole green chilies , drained ( I used jarred Pepperoncini for mine and whole canned jalapenos for my husband )
1/2 cup shredded lowfat mozzarella cheese
This Smothered Green Chili Pepper Chicken recipe is a delicious and quick main course that can be whipped up on a weeknight. The chicken is seasoned with taco seasoning and topped with green chili peppers and low-fat mozzarella cheese. Instructions

1.Preheat the oven to 375°F (190°C).
2.Pat each chicken breast dry with paper towels.
3.Drizzle the lime juice over both sides of each chicken breast.
4.Season each chicken breast with 1/2 tablespoon of the taco seasoning.
5.Cut each green chili pepper in half and remove the seeds.
6.Place 2 green chili pepper halves on top of each chicken breast.
7.Cover the chicken and chilies with the shredded mozzarella cheese.
8.Bake the chicken in the preheated oven for 20-25 minutes or until the chicken is cooked through and the cheese is melted and bubbly.
