1 egg ( beaten )
1/4 cup milk
3 ounces tortilla chips
1 1/2 cups monterey jack cheese ( shredded )
1/2 cup sour cream
1 can stewed tomatoes
1 1/2 teaspoons chili powder
salt and pepper
parsley , and black olives for garnish

Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.In a skillet, cook onion in olive oil until translucent.
3.Stir in tuna, egg, milk, 2 ounces of tortilla chips, 1 cup of cheese, sour cream, stewed tomatoes, chili powder, salt, and pepper.
4.Mix well and pour mixture into a 2 quart casserole dish.
5.Crush remaining tortilla chips and sprinkle over the top of the tuna mixture.
6.Bake in the preheated oven for 20 minutes.
7.Remove from oven and sprinkle remaining cheese on top.
8.Return to oven and bake for an additional 5-10 minutes or until cheese is melted and bubbly.
9.Garnish with parsley and black olives, if desired.
