1/4 cup fresh lime juice
6 tablespoons chopped toasted almonds

1 cup masa harina ( corn tortilla mix )
1 teaspoon baking powder
1 teaspoon salt
1/2 cup unsalted butter , melted , cooled
1/2 cup water , plus
1 tablespoon water
2 large eggs
sour cream
3 cups chopped tomatoes
3/4 cup chopped fresh cilantro
3 tablespoons fresh lime juice
1 1/2 tablespoons chopped chipotle chiles in adobo
1 1/2 teaspoons ground cumin

Instructions

11.Form dough into 24 balls.
12.Flatten each ball into a 3-inch circle.
13.Place 1 tablespoon of the pork mixture in the center of each circle.
14.Fold over and seal the edges.
15.Place on a baking sheet.
16.Brush with egg wash and bake for 20-25 minutes or until golden brown.
