Ingredients

8 tortillas
2 cups flour ( sifted )
1 teaspoon salt
1/4 cup shortening
1/2 cup water ( lukewarm )
1/3 cup chopped onion
1 teaspoon shortening
1/2 teaspoon salt
1 dash pepper
1 dash garlic
1/2 lb ground beef
3/4 cup lettuce ( shredded )
1/3 cup cheese ( shredded , we use cheddar )
1 can tomato soup
1 dash salt
1/4 teaspoon garlic salt
1/4 teaspoon oregano
1/4 teaspoon cayenne pepper
1/4 cup water
Please Make More Enchiladas are a classic Mexican dish that's perfect for a family dinner. The homemade tortillas add a nice touch of freshness and the filling is hearty and flavorful. While this recipe may take a little more time to make than some other enchilada recipes, the end result is well worth it. This recipe is sure to please everyone at the dinner table, and you may find yourself making it over and over again!

Instructions

1.Preheat oven to 350 degrees F (175 degrees C).
2.To make the tortillas: In a medium bowl, mix together the sifted flour and salt. Using a pastry cutter or your fingers, blend in the shortening until the mixture resembles coarse crumbs. Stir in the water and knead the dough until elastic. Divide the dough into 8 portions. Roll each portion into a thin circle. Cook tortillas in a dry skillet over medium-high heat for about 1 minute on each side.
3.To make the filling: In a medium skillet, saute onion in 1 teaspoon shortening until translucent. Add salt, pepper, garlic, and ground beef. Cook until browned. Drain any excess grease.
4.To assemble the enchiladas: Place a spoonful of the meat mixture on each tortilla. Sprinkle shredded lettuce and cheese over the meat. Roll tortillas and place seam side down in a 9x13 inch baking dish.
5.To make the sauce: In a medium saucepan, mix tomato soup, salt, garlic salt, oregano, cayenne pepper, and water. Cook over medium heat until heated through.
6.Pour sauce over enchiladas. Bake in preheated oven for 20 minutes, or until heated through and cheese is melted.
