Instructions

1.Preheat the oven to 375 degrees F.
2.Cook the sausage in a skillet over medium heat until browned and cooked through.
3.In a 9x13 inch baking dish, combine the cooked sausage, stewed tomatoes, diced onion, diced green bell pepper, uncooked rice, and half of the shredded cheddar cheese. Mix well.
4.Cover the baking dish with foil and bake in the preheated oven for 45 minutes.
5.After 45 minutes, remove the foil and sprinkle the remaining shredded cheddar cheese on top of the casserole.
6.Return the casserole to the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbly.
