Ingredients

3 cups cooked chicken thighs , shredded ( boneless & skinless )
2 cups shredded Mexican blend cheese , 4-cheese
1 cup scallion , chopped
1/2 teaspoon garlic powder
1/2 teaspoon ground cumin
1/2 teaspoon onion powder
1/2 teaspoon lemon-pepper seasoning
1 dash kosher salt
1 can black beans , rinsed and drained
1 can whole kernel corn , rinsed and drained
1 can diced tomatoes and green chilies , drain
enchilada sauce
1 can enchilada sauce
72 inches corn tortillas
1 can sliced black olives , drained
fresh cilantro leaves , garnish
sour cream , garnish
guacamole , garnish
Make dinner time special with this delicious, saucy, and cheesy chicken enchilada casserole. The flavors of Mexico are infused in every bite of this comfort food classic that is perfect for a family dinner or sharing with friends. This satisfying and simple casserole is loaded with tender chicken, black beans, corn, tomatoes, sliced olives, and shredded cheese, then smothered in spicy enchilada sauce. It is then baked until bubbly and melted, the perfect cozy dinner that will comfort you on cold nights.

Instructions

1.Preheat oven to 350 F (175 C). Grease a 9x13 inch baking dish.
2.In a large bowl, combine cooked chicken, shredded cheese, chopped scallions, garlic powder, cumin, onion powder, lemon-pepper seasoning, salt, black beans, corn, and diced tomatoes and green chilies. Stir until well combined.
3.Spread 1 can of enchilada sauce over the bottom of the prepared baking dish. Top with 6 corn tortillas, overlapping as needed.
4.Spread half of the chicken mixture over the tortillas.
5.Repeat with remaining enchilada sauce, corn tortillas, and chicken mixture.
6.Top with drained sliced black olives.
7.Cover with foil and bake for 25 minutes.
8.Remove foil and bake for an additional 10-15 minutes until cheese is melted and bubbly.
9.Garnish with fresh cilantro leaves and serve with sour cream and guacamole if desired.
