2 -4 jalapeno chiles , stemmed , seeded and finely chopped
4 sprigs epazote , leaves only , finely chopped ( or 2 teaspoons crumbled dried epazote )
4 ounces manchego cheese , shredded ( about 1 cup )

Instructions
