1 1/2 tablespoons yellow cornmeal
1 can hormel spicy chili with beans
1/2 cup shredded cheddar cheese or 1/2 cup Mexican blend cheese
2 tablespoons chopped cilantro ( or scallions )

1 can prepared pizza crust
sour cream , guacamole , olives , and/or salsa , for garnish

Instructions

1.Preheat your oven to 425 degrees F. Grease a large baking sheet and set aside.
2.In a small bowl, combine the yellow cornmeal with about 1 tablespoon of water, stirring until smooth. Set aside.
3.In a large mixing bowl, combine the can of spicy chili with beans, shredded cheddar cheese, chopped cilantro or scallions, and minced jalapeno pepper. Mix well.
4.Roll out the prepared pizza crust onto a lightly floured surface. Using a pizza cutter, slice the crust into 4 equal-sized squares.
5.Working with one square at a time, spread a spoonful of the cornmeal mixture over the surface of the crust. Spoon a heaping spoonful of the chili mixture onto the center of the crust.
6.Fold the corners of the crust in toward the center, pinching and folding as you go until a small pocket is formed. Place the finished pocket onto the greased baking sheet. Repeat with the remaining squares and chili mixture.
7.Bake the pockets in the preheated oven for 12-15 minutes, or until lightly golden brown. Remove from the oven and let cool for a few minutes.
8.Serve your Spicy Chili-Cheddar Burrito Pockets warm, garnishing with sour cream, guacamole, olives, and/or salsa as desired.
