Ingredients

1 lb nopales ( cactus paddles )
1 lb plum tomato
1/4 medium onion
1/2 cup water , divided
1 tablespoon olive oil
1 sprig epazote
2 teaspoons chicken base
1/2 teaspoon salt , to taste

Instructions

1.Rinse cactus paddles under cold water and remove thorns and edges.
2.Cut the paddles into medium-sized cubes and set aside.
3.Roast the tomatoes and onion in a pan over medium heat until soft and tender. Let it cool.
4.Once cool, blend the tomato and onion until smooth.
5.In a separate pot, heat the olive oil over medium heat.
6.Add the cactus and cook for 5 minutes until they release their juices. Strain the juice.
7.Add the blended tomato puree and epazote and bring to a simmer.
8.Add the chicken base, salt, and half cup of water. Lower the heat and let it simmer for 25 minutes.
9.Serve and enjoy!
