Ingredients

1 1 lb cooked pork or 1 lb cooked chicken
16 ounces mild salsa
16 ounces refried beans ( fat-free will work )
128 inches flour tortillas
1 lb four-cheese Mexican blend cheese
Kids can be picky eaters, but these Easy Make-Ahead Chimichangas are sure to be a hit. Filled with cooked pork or chicken, mild salsa, and refried beans, these chimichangas are wrapped in flour tortillas and topped with four-cheese Mexican blend cheese. Simple to make ahead of time and bake when ready, these chimichangas will become a household favorite. The whole family will love them for lunch or dinner. Don't forget to add some salad or vegetables to accompany the dish.

Instructions

1.Preheat the oven to 350 degrees F.
2.In a large bowl, mix together the cooked pork or chicken, salsa, and refried beans.
3.Spoon 1/4 cup of mixture onto each flour tortilla on one end. Sprinkle 1/4 cup of cheese on top of mixture.
4.Roll up tortillas tightly, tucking in sides.
5.Place the rolled chimichangas seam-side down on a baking sheet lined with aluminum foil.
6.Bake for 25 to 30 minutes, or until golden and crisp.
