Ingredients

1 1/2 cups refried black beans

2 tablespoons black peppercorns
1 tablespoon mustard seeds
2 teaspoons red pepper flakes
2 teaspoons coarse salt
20 medium shallots , peeled

Instructions

1.Preheat your oven to 425°F (220°C).
2.Cut off the ends of the butternut squash, peel it, and remove the seeds. Then, chop 1-inch cubes of butternut squash and toss them with olive oil, salt, cinnamon, cumin, and black pepper.
3.Spread the seasoned butternut squash evenly on a baking sheet and bake for 20-25 minutes or until the squash is tender.
4.Wrap the tortilla stack tightly in foil and heat in the oven for the last 5 minutes of butternut squash cook time.
5.Once butternut squash is ready, fill each tortilla with 2 tablespoons of refried black beans and 1/4 cup of butternut squash. Top with pickled shallots, fresh cilantro, diced serrano chilies, and a dollop of creme fraiche or sour cream.
6.Serve hot and enjoy!
