Tex Mex Tacos Al Pastor is a delicious fusion of Mexican and Texan flavors. This dish originated in Central Mexico, where it was traditionally made with pork that had been marinated in spices and slow-roasted on a spit. The Tex Mex version of this recipe includes the addition of pineapple, giving the tacos a sweet and tangy flavor. The pork is marinated in a blend of spices and orange juice, making it flavorful and juicy. Top with fresh cilantro, chopped onion, and spicy picante sauce for a satisfying meal that is perfect for a busy weeknight dinner with family and friends.

Instructions

1.In a small bowl, mix the garlic granules, cider vinegar, oregano, guajillo chili powder, black pepper, cumin, and salt together to create a marinade.
2.In a large resealable bag, add the orange juice and pork slices. Add the marinade and achiote paste, seal the bag, and mix well. Refrigerate for at least 1 hour, or overnight for best results.
3.Preheat a grill or grill pan to medium-high heat. Grill the marinated pork slices for 3-4 minutes on each side until they are cooked through.
4.Grill the pineapple strips until they are charred and caramelized, around 2-3 minutes on each side.
5.Assemble the tacos by placing a slice of pork and a pineapple strip on each warm tortilla. Top with chopped onion, fresh cilantro, and picante sauce as desired.
