4 ounces tofu
1/2 cup of lawry 's baja chipotle-flavored marinade
1/2 sliced onion
1/2 sliced green pepper
1/4 cup chopped green onion
1 small tomatoes , chopped
1 garlic clove , minced
salt and pepper
2 tablespoons oil
uncle ben 's Mexican rice
Super Easy Mexican Tofu is a quick and delicious plant-based meal that's perfect for a busy weeknight dinner. Instructions

1.Cut tofu into small cubes and marinate with Lawry's Baja Chipotle-Flavored Marinade for at least 30 minutes in the fridge.
2.Heat up 1 tablespoon of oil in a skillet over medium heat. Add sliced onion, green pepper, and garlic. Sauté for about 3-5 minutes until vegetables are tender.
3.Remove vegetables from the skillet and set aside. Using the same skillet, add another tablespoon of oil and tofu cubes. Sauté for about 5-7 minutes until tofu is crispy on the outside and tender on the inside.
4.Add the sautéed vegetables back to the skillet with the tofu. Add chopped green onion, chopped tomatoes, salt, and pepper. Stir everything together and cook for another 3-5 minutes until vegetables are heated through.
5.Prepare Uncle Ben's Mexican Rice following the instructions on the package.
6.Serve Super Easy Mexican Tofu over a bed of Mexican rice.
