1 bag assorted fingerling potatoes , washed and cut lengthwise
1 tablespoon olive oil
1 tablespoon chili powder
2 teaspoons garlic , minced
3/4 teaspoon salt
1/2 teaspoon pepper
1 medium onion , cut into 1/2-inch thick wedges
1 1/2 cups cherry tomatoes , halved
1/3 cup cilantro , chopped
1 tablespoon fresh lime juice
4 lime wedges ( optional )

Instructions

1.Preheat the oven to 425°F (218°C).
