Ingredients

1 1/4 cups cilantro , coarsely chopped
1/2 cup green bell pepper , chopped
1/2 cup onion , chopped
1/4 cup water
3 garlic cloves
2 teaspoons salt
1 teaspoon ground cumin
1/2 teaspoon hot sauce
1/2 teaspoon achiote paste ( annatto paste )
3 lbs chicken , cut into 8 pieces
2 tablespoons olive oil
1 lb russet potato
2 cups water
1 bottle beer ( not dark )
1 cup long grain rice
3 tablespoons fresh cilantro , chopped

Asopao De Pollo is a traditional rice-based soup/stew that originated in Puerto Rico. It’s a comforting and hearty dish that comes in many variations with each family cooking it a different way. It is usually cooked with bone-in chicken that is cut into small pieces and left to simmer with spices and vegetables. The rice and potatoes help thicken the broth, making it more substantial while the hot sauce gives it a little bit of a kick. The result is a satisfying stew that is perfect for a cold day.

Instructions

1.Start by blending the cilantro, green bell pepper, onion, ¼ cup water, garlic cloves, 1 teaspoon salt, ground cumin, ½ teaspoon hot sauce and ½ teaspoon achiote paste in a blender until it becomes a smooth paste
2.Brown the chicken pieces in 2 tablespoons of olive oil until they become golden on both sides
3.Add the blended mixture to the chicken and sauté for 4 minutes
4.Add the peeled and cubed potatoes and the rest of the salt and sauté for another 3 minutes
5.Pour 2 cups of water and a bottle of beer into the chicken mixture and let it cook for 15 minutes until it starts to boil
6.Reduce the heat to low and add 1 cup of rice, stirring while doing so
7.Cover and cook the chicken for about 20 minutes or until fully cooked through
8.Top it off with some chopped fresh cilantro and a dash of hot sauce
