Ingredients

1 medium carrot , peeled
1 medium potato , peeled
1 medium zucchini , peeled
1/2 cup queso Cotija cheese , crumbled ( or queso fresco )
1/2 cup monterey jack cheese , pulled into strings ( or queso Oaxaca )
2 large poblano chiles ( may use anaheim , cubanelle , bell peppers , banana peppers instead )
1 cup cooking oil
1 egg , white and yolk separated

Instructions

1.Preheat the oven to 375°F.
2.Cut the carrot, potato, and zucchini into small pieces and cook until tender in a pot of boiling salted water. Drain the vegetables and mash them together in a bowl. Mix in the Cotija cheese and set aside.
3.Roast the poblano chiles under the broiler until the skin is charred all over. Place the chiles in a closed paper bag for 10 minutes to cool. Then, peel and clean out the seeds.
4.Stuff the chiles with the mashed vegetable mixture.
5.In a shallow bowl, beat the egg whites until they are stiff but not dry. Beat the egg yolks and fold them into the whites.
6.In a frying pan or skillet, heat the oil until it is very hot. Dip the stuffed chiles into the egg mixture, coating them well, and cook them in the hot oil until they are golden brown on all sides.
7.Transfer the chiles to a baking dish and bake them in the oven for 10 to 15 minutes, until they are heated through and the cheese is melted.
