Ingredients

1 can fat-free refried beans
1 cup Pace Picante Sauce , Medium
1 can roasted green chilies
1 can black beans
1 can corn
1/2 cup red sweet pepper
1/2 cup orange sweet bell pepper
1 cup green bell pepper
1 small diced onion
2 tablespoons dried chipotle powder
8 roasted green chilies
8 ounces cheese
1/2 cup cilantro

Instructions

1.Preheat oven to 375° F (190° C).
2.In a large bowl, mix together refried beans, Pace Picante Sauce, and roasted green chilies.
3.Layer half of the mixture into the bottom of a 9x13 inch baking dish.
4.Drain and rinse black beans and corn. Layer on top of the refried bean mixture.
5.Chop red, orange, and green bell peppers, and sprinkle on top of the corn and black beans.
6.In a small bowl, mix together diced onion and chipotle powder. Sprinkle the onion mixture over the peppers.
7.Pour remaining refried bean mixture on top of the onion mixture.
8.Roast 8 chilies, remove from oven, and chop coarsely. Sprinkle chilies over the top of the casserole.
9.Cover the casserole with foil and bake for 45 minutes.
10.Remove foil and bake for an additional 15 minutes or until casserole is heated through. Sprinkle shredded cheese and cilantro on top. Let sit for 10 minutes before serving.
