Ingredients

1/2 cup fresh parsley leaves , coarsely chopped
1/2 cup fresh cilantro leaves , coarsely chopped
1/2 cup white onion , chopped
1/4 cup water
1 green chili pepper , chopped coarsely ( mild or spicy )
1 tablespoon lime juice or 1 tablespoon lemon juice
2 garlic cloves , peeled and chopped
2 tablespoons olive oil
1 cup morelos ' rice
2 cups vegetable broth or 2 cups chicken broth
salt , to taste

Instructions

1.In a blender add parsley, cilantro, onion, water, chili pepper, lime juice and garlic, blend until smooth.
2.Heat olive oil in a medium saucepan over medium heat, pour in rice and toast until golden for 3-4 minutes.
3.Add the blended mixture and stir until combined.
4.Add vegetable or chicken broth and salt, stir to combine.
5.Bring to a boil then reduce heat to low and cover the rice with a lid, cook for about 20 minutes or until the liquid is absorbed and the rice is fully cooked.
6.Remove from heat and let the rice sit for 5 minutes before fluffing with a fork. Serve and enjoy!
