Platanos Maduros, or Fried Sweet Plantains, are a classic dish throughout Latin America and the Caribbean. They are sweet and caramelized, with a crispy exterior and a soft and tender interior. Plantains are a type of banana that is less sweet and more starchy, making them perfect for frying. This dish is often served as a side dish alongside beans, rice, or meat, but can also be enjoyed as a snack or dessert.

Instructions

1.Preheat oven to 300°F.
2.Slice the plantains into rounds about 1/2 inch thick.
3.Dip the plantains into lemon juice to prevent browning.
4.Beat egg whites until stiff peaks form. In a separate bowl, beat egg yolks until light and frothy. Fold egg yolks into egg whites.
5.In another bowl mix together flour and salt. Gently fold flour mixture into egg mixture until batter is just combined.
6.Heat oil in a frying pan. Working in batches, dip each plantain slice into the batter, coating it evenly, then fry until golden brown. Drain on paper towels and transfer to a baking sheet.
7.Bake for 3-5 minutes, just enough to reheat them and cook any remaining raw flour.
