Ingredients

2 tablespoons olive oil ( corn or peanut will work well too )
3 garlic cloves , minced
1 yellow onion , diced
2 jalapenos , seeded and minced ( serranos work well too )
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon chile powder ( ancho or a blend is nice )
2 cans pinto beans , draines and rinsed ( black or pink beans work well too )
1 bay leaf
2 cups water
salt and fresh pepper
Home-Style Refried Beans are a popular Mexican dish that consists of mashed and seasoned beans. In this recipe, we have used pinto beans, but black or pink beans can be used as well. Instructions

1.In a large skillet, heat olive oil over medium-high heat.
2.Add minced garlic, diced onions, and jalapenos in the skillet. Cook until the onions are translucent.
3.Stir in cumin, dried oregano, and chile powder. Cook for another minute.
4.Add the drained and rinsed pinto beans to the skillet.
5.Pour in 2 cups of water and add a bay leaf.
6.Bring the mixture to a boil then reduce the heat to low. Simmer for 30 minutes.
7.Remove the bay leaf, then mash the beans with a potato masher or a fork.
8.Season with salt and fresh pepper to taste. Serve warm.
