4 russet potatoes , scrubbed
1 tablespoon olive oil or 1 tablespoon canola oil

1/2 cup excellent red chili powder
1 1/2 cups cold water
2 cups light chicken broth
1 teaspoon vinegar
1 teaspoon salt
1 1/2 cups monterey jack cheese
3 green onions , minced

Instructions

1.Peel the potatoes, cut them lengthwise, and slice them into 1-inch thick pieces. Soak them in salted cold water for at least an hour.
2.Meanwhile, prepare the sauce by heating 2 tablespoons of canola oil in a pot over medium heat. Add flour, garlic, cumin, oregano, and chili powder. Stir constantly for 3 minutes until the mixture becomes dark brown.
3.Slowly whisk in cold water, chicken broth, vinegar, and salt. Simmer for 20 minutes until thick.
4.Heat 1 tablespoon of canola oil in a skillet over medium-high heat. Add the potato slices and cook for 2-3 minutes on each side until crispy.
5.Using a flat utensil, smash the potato slices into discs of approximately 1/8 inch thick.
6.Heat the remaining tablespoon of olive oil in the skillet and fry the flattened potatoes until golden brown and crispy. Drain them on a paper towel.
7.Spoon the sauce over the tostones and top with the shredded Monterey Jack cheese and minced green onions. Serve immediately.
