8 potatoes , peeled and chopped into squares
6 -8 fresh jalapenos
2 large tomatoes
1 onion , chopped
2 garlic cloves , peeled

2 tablespoons of knoor chicken bouillon powder ( consome )
1 teaspoon cumin
12 ounces mexican queso fresco , chopped into cubes
2 -3 cups water
oil ( for frying )

Instructions

6.Reduce the heat to low and let the sauce simmer for 10-15 minutes.
7.Once the potatoes are tender, drain them and add them to the skillet with the sauce. Mix to combine.
8.Add the chopped Mexican queso fresco to the skillet and mix to combine.
9.Serve the Mexican potatoes with cheese hot, garnished with chopped cilantro or green onions, if desired.
