Ingredients

1/2 cup quinoa , rinsed and drained
1 sweet potatoes , peeled and cut into 1/2 inch cubes

1 cup frozen peas
1/2 cup low-sodium low-fat chicken broth ( optional )
3 tablespoons chopped fresh cilantro
1/4 teaspoon salt
1/8 teaspoon ground black pepper
1 lime ( optional )

Instructions
