Ingredients

3 medium boiling potatoes , peeled and cut into 1/2-inch dice
1/2 cup olive oil
2 medium onions , halved and cut in 1/4-inch slices , lengthwise
4 medium red bell peppers , roasted , peeled , seeded and julienned
1 cup heavy cream
3/4 cup grated manchego cheese or 3/4 cup monterey jack cheese
2/3 2/3 cup romano cheese or 2/3 cup parmesan cheese
4 medium ripe tomatoes , cored , seeded and finely diced
1/4 red onion , minced
2 jalapeno chiles , stemmed , seeded if desired and minced
1 bunch fresh cilantro , leaves only , chopped
2 tablespoons freshly squeezed lime juice
3/4 teaspoon salt
1 pinch fresh ground black pepper

Instructions

4.Heat olive oil in a medium skillet over medium-high heat.
5.Add onions and saute until golden, for about 10 minutes.
6.Add red bell peppers and saute them until they're tender, for about 5 minutes.
7.Lower the heat to medium-low, pour in the heavy cream, and bring the mixture to a simmer.
8.Let it simmer for about 3 minutes.
9.Add grated Manchego, Romano cheese, salt, and pepper to the skillet.
10.Stir until the cheese is completely melted and combined with the cream.
11.Add the potatoes to the skillet and mix.
12.Toast tortillas in a skillet over medium-high heat.
13.Serve with diced tomatoes, red onions, minced jalapeno chile, fresh cilantro leaves, and lime juice.
