6 roma tomatoes
2 tablespoons ground cumin
1 tablespoon minced onion

2 cups sunflower seeds , soaked overnight
2 cups almonds , soaked overnight

Instructions

1.Preheat the oven to 250°F.
2.Rinse and drain the tomatoes. Place them, with the cumin, onion, and garlic in a blender or food processor and blend until liquefied.
3.In a different blender or food processor, blend the soaked sunflower seeds and almonds until smooth.
4.Combine both blends and mix until well incorporated.
5.Spread the mixture on a parchment paper-lined baking pan and bake for approximately 2-3 hours.
6.Once completely dried, break the mixture into small pieces and pulse in a food processor or blender until it reaches a refried beans texture.
7.Heat a pan and add the refried beans mixture. Stir for a few minutes until heated through and serve.
