2 cans chopped green chilies , draned
1/2 cup salsa
1/2 teaspoon salt
1/2 teaspoon ground cumin
6 cups hot cooked rice
1 cup shredded monterey jack cheese
1 cup shredded mild cheddar cheese

Instructions

1.Preheat oven to 375°F.
2.Blend whole green chilies, chopped green chilies, salsa, salt and cumin in a food processor or blender, until smooth.
3.Mix rice, monterey jack cheese and cheddar cheese together in a large bowl.
4.Grease 6 ramekins or muffin cups.
5.Fill each ramekin or muffin cup halfway with rice mixture.
6.Spoon about 1/4 cup of the green chili mixture into each ramekin or muffin cup.
7.Top the green chili mixture with another layer of the rice mixture, filling and pressing firmly to pack the rice.
8.Cover each ramekin or muffin cup with greased foil and place them on a baking sheet.
9.Bake for 25-30 minutes, until heated through and cheese are melted.
10.Turn over each ramekin or muffin cup onto a plate and serve hot.
