Instructions

1.In a medium pot, add 1 tablespoon vegetable oil and heat over medium-high heat.
2.Once hot, add rice and onion, cook until the onion becomes translucent, stirring occasionally.
3.Add chicken broth to the pot, stirring occasionally and bring it to a boil.
4.Reduce the heat to a very low and simmer until the rice cooks completely. (about 20-25 minutes)
5.Meanwhile, prepare the chiles by roasting them over a gas flame, turning occasionally until all sides are blistered and blackened. Once done, put them in a plastic bag and keep it closed for at least 15 minutes.
6.Remove the skin of roasted chiles and cut them into strips.
7.Once the rice is ready, remove it from the heat and add the remaining oil, corn, chiles, salt, and cheese, mix together using a fork.
8.Garnish with watercress or parsley sprig and serve hot.
